BBQ Vegetable Skewers with Crunchino and Pesto

Looking for a flavorful and healthy alternative to meat on the barbecue? Try these delicious BBQ vegetable skewers with Crunchino and pesto.

Preparation:

  1. Slice the Crunchino breads lengthwise and then cut them into pieces about 3 cm by 3 cm. Halve the tomatoes. Slice the zucchini into half-moons by cutting it lengthwise and then into 2 cm pieces. Use a cheese slicer or mandoline to create ribbons from the carrot. Cut the red onion into 6 wedges.
  2. Thread the vegetables onto skewers by color (e.g., all red vegetables on one skewer, etc.). Brush them with a bit of oil, and season with salt and pepper.
  3. Grill the vegetable skewers on the BBQ or in a grill pan until they are cooked through. Brush the skewers with some pesto before serving.

  • 1 red onion
  • 1 zucchini
  • Cherry tomatoes, red and yellow
  • 1 green tiger tomato
  • Carrot
  • 1 jar (vegan) pesto
  • Oil, pepper, and salt
