Carnival pappardelle

This is truly a dish for the whole family. A dish to please everyone, young and old. Enjoy a lovely meal together without having to stand in the kitchen for hours. Carnival in a large bowl.

PREPARATION

Put 500 g of tomatoes, 1 shallot, 1 garlic clove, 1 cayenne pepper (without seeds), olive oil and white balsamic vinegar in a tall measuring jug. Blend this with the hand blender to a smooth salsa.

Cut 500 g of cherry carnival tomatoes in half.

Place half the tomatoes on a baking tray with baking paper, sprinkle with olive oil, salt and pepper and roast the tomatoes for 5 minutes in a preheated oven at 220 °C.

Mix the other half of the tomatoes in a bowl, season with olive oil and salt and pepper.

Roughly pick the herbs. Bring a pan of salted water to the boil and cook the pasta in it.

Put the salsa in a large pan and add the cooked pasta. Mix the pasta well with the sauce and season with salt and pepper. Serve the pasta with the marinated and roasted tomatoes and the fresh herbs. Finally, grate the pecorino cheese over it.
