The Fiamma is a well-known delicacy in Italian cuisine and is also known as the Purpura.
The round fruit is a real eye-catcher due to its attractive appearance; in addition to its white base colour, it has a purple tint. The flesh is beautifully white and firmer than that of an ordinary aubergine. It contains a lot of protein, iron and vitamin B, which makes it very suitable as a meat substitute.
This Italian aubergine has a full, juicy flavour. Its fine texture melts on the tongue but still retains a good bite.
Because of its firm flesh, the Fiamma is ideal for grilling or baking, which gives the aubergine a surprising caramel-like crunch. Add a touch of Oriental flavour by making a marinade of sesame, hoisin and soya sauce with some fresh ginger and coriander. Cut thick slices of the aubergine and cover them with the marinade, grill or barbecue them and enjoy!
